- Up to 70% of the famous "Les Chetillons" vineyard in the wine
- Step up your blanc de blancs game with this excellent cuvèe
- Kingfish Ceviche with dill and buttermilk. The dill brings out those herbaceous notes in the wine and the taught acidity and mineral drive was just superb with the luscious buttermilk and raw fish.
This is a Blanc de Blancs with all the fruit being sourced from the Grand Cru village of Les Mesnil Sur Oger. According to winemaker Marie Doyard who visited the Emperor HQ in October 2017, confirms there is approximately 60-70% Les Chetillons in this Cuveé which is one of the most prized vineyards in this village.
The vines are an average of 70 years of age, which adds immediate depth of flavour and character. Combine this with the base wine coming from the excellent 2012 vintage as well as 20% reserve wines, a minimum of 5 years aged on lees, 100% fermentation in Burgundy barrels, no malolactic fermentation and Zero dosage and the result is something quite magnificent.
Expect a whirlwind of complexity and tension with notes of pear, lemon peel, a minty-herbal element and ever-present minerality coming through on the palate. The wine benefits from being open for a few hours to allow some oxygen through it. If you can, save half a bottle or so and see how different it is after a few hours. The aromatics opened up and the wine tasted even better.
