The longest-established champagne house of all has an affinity with chardonnay’s freshness, finesse and elegance, and all of its finest cuvées lead with this variety, even its prestige rosé. Without the might of Moët & Chandon, the brand impact of Veuve Clicquot or the cachet of Krug, Ruinart lurks as the low-profile member of the Louis Vuitton–Moët Hennessy family. On Reims’ famed Rue de Crayères, its premises hide behind the grand street presence of Pommery and Veuve Clicquot. This is just as Panaïotis would have it. ‘In France we have a saying, if you live underground, you live happy!’ he says. But on its performance, Ruinart has no need to lie low. Average vine age is about 35 years, with the oldest vines in Avize over 60 years. Pascal Agrapart is uninterested in being labeled as either organic or biodynamic, but he does feel that it’s important to work according to natural rhythms and sensibilities, and both the vineyard work and the work in the cellar follow this philosophy. No chemical pesticides or weedkillers are ever used, and all of the vineyards are worked manually, encouraging the roots to descend deeper. Agrapart places great importance on the proper technique and timing of pruning to control vineyard maladies, and some homeopathic treatments are also used in the vines to control parasites.

As expected for a Champagne estate that places a strong emphasis on viticulture, the average potential alcohol at harvest is very high here, normally around 11 degrees, and Agrapart virtually never chaptalizes any of his wines. The grapes are pressed with a traditional Coquard vertical press, and fermentation is carried out with natural yeasts, which Agrapart feels is crucial to the expression of terroir. Malolactic fermentation is completed for all the wines, and a portion of the best wines of the harvest are aged in old, 600-liter demi-muids: “the older the better,” says Agrapart, as he hates the flavors of new barrels. Bollinger are well known for their dominance of the powerful and expressive pinot noir from Aÿ where they were founded, their use of magnums for production of all their wines and a traditional wine making style incorporating fermentation in oak barrels from which they have never deviated. They still have their own in-house cooper who makes and manages their stock of some 3,500 barrels! That equates to about 1 million bottles being fermented in barrel - that is the largest (along with Krug) of any other producer in the region. Currently Bollinger own some 164 hectares in some of the best sites across Champagne.

Food Suggestion

This rose is one of our favourites - it is delicate with rose and fresh strawberry notes but with the biscuity fullness and structure you would expect on classic Bollinger Special Cuvee. Egly-Ouriet (pronounced Egg-lee Ou-ri-yay) is based in the grand cru village of Ambonnay, famed for its pinot noir fruit. It is run by the skillful, Francis Egly who practices biodynamic and organic principals in his vineyards which span, Bouzy and Verzenay. Francis makes up a handful of highly talented and terroir-driven producers along with the likes of Anselme Selosse, Larmandier-Bernier and Vouette et Sorbée. These are wines first and he produces deep, powerful and intense styles of champagne. His minimum ageing is around 48-60 months (as declared on his informative back label) for his non-vintage wines, allowing time to express the inner strength and purity. The wines have absolutely no dosage and are made at a lower bar of pressure resulting in finer bubbles and powerful vinous cuvees. It was put up for auction in 1937 and purchased by René Chayoux, the son of an Epernay wine merchant. Chayoux was actively involved in various business affairs in the region, and eventually became co-president of the CIVC from 1944 to 1955. He enlisted Jean-Michel Ducellier, director of the CIVC and a former finance director of Charles Heidsieck, to help him run the house, and upon Chayoux’s death in 1969, Ducellier assumed responsibility for the house until his retirement in 1995.

Ayala was sold again in 2000 to the Frey group, and Thierry Budin, a former president of Perrier-Jouët, took over the helm. Five years later, however, Ayala was purchased by the Bollinger Group. Bollinger bought the property and the stocks of wine, but Frey retained the vineyards, forcing the house to rely on purchased grapes. Hervé Augustin was appointed president and general manager of the house, while Nicolas Klym, who had been making wines for the house since 1979, was retained as chef de cave. Under Augustin, the house reinvented its style, focusing heavily on non-dosé champagnes, as well as increasing its use of chardonnay.

Since 2012, the direction of the house has been in the hands of Hadrien Mouflard, and Caroline Latrive (pictured) has taken over as chef de cave, having previously worked alongside Klym since 2006. In addition, Ayala now owns 20 hectares of vines in the Côte des Blancs (Chouilly, Oger) and Vallée de la Marne (Passy-Grigny, Champvoisy), and the house has completed new winery facilities on its property in Aÿ as of 2013.
